Chestnuts

Blend into a smooth, dense base that gives the truffles their structure and mild, earthy sweetness. You could roast your own and use them, or just use vacuum-packed chestnuts for convenience. 

Vegan Butter

This helps the mixture set with a soft, truffle-like texture. Coconut oil works if you prefer a firmer set, but it will noticeably change the flavour.

Dark Chocolate

Chocolate is essential here for both flavour and structure, giving the truffles their depth and helping them firm up once chilled. Choose 70% or higher for the best balance, and use a dairy-free option if you want the recipe to remain fully vegan.

Cocoa Powder

Provides depth and a balanced chocolate flavour while keeping the sweetness in check. It blends smoothly and gives the truffles a familiar, well-rounded finish.

Maple Syrup

Sweetens the mixture and adds enough moisture to make it blend smoothly. Agave works, but the flavour will be lighter.

Step-by-Step Instructions

Melt the Chocolate

Break the dark chocolate into small pieces and melt it in a heatproof bowl set over a pan of gently simmering water. Stir until smooth.

Tip: Keep the heat low so the chocolate doesn’t seize or turn grainy.

Blend the Base

Add the chestnuts, vegan butter, cocoa powder, maple syrup, vanilla, and salt to a food processor. Blend until mostly smooth, scraping down the sides as needed. The mixture should look thick and cohesive rather than crumbly. 

Incorporate the Chocolate

Pour in the melted chocolate and blend until the mixture becomes glossy and uniform. If it feels too stiff, add 1–2 teaspoons maple syrup. If it’s too soft to hold its shape, chill for 10–15 minutes.

Portion and Roll

Scoop and weigh 15 g portions for even truffles, then roll each one between your palms until smooth. A melon baller works really well for portioning the balls if you have one. 

Tip: Slightly damp hands prevent the mixture sticking to your hands if the mix is still a little warm.

Coat the Truffles

Roll each piece in cocoa powder, crushed hazelnuts, or cacao nibs. I find its easiest to do this on a plate, and then tap them a few times to knock off any excess coating (this is more important with cocoa powder as it will coat very thickly)

Place the truffles on a clean plate and chill for at least 30 minutes, or until firm to the touch. They should hold their shape cleanly when picked up.

Store

Kept refrigerated in an airtight container, these vegan chestnut truffles keep well for up to 1 week. They’re still fine to eat after that, but the texture will start to dry out and turn more crumbly than smooth. The flavour holds well, but the texture won’t be as good.

For longer storage, freeze for up to 1 month and thaw in the fridge until just soft enough to bite.

Flavour Variations

Rum + Coconut Oil

Replacing the vegan butter with coconut oil gives the vegan chestnut truffles a firmer set and a natural coconut flavour that works well with rum. Add 1–2 teaspoons of dark rum to create a cleaner, warmer finish that leans into a classic rum-ball profile.

Espresso + Dark Chocolate Notes

A tablespoon of cooled espresso works best alongside slightly darker chocolate or a touch more cocoa powder. It sharpens the chocolate flavour and keeps the sweetness in check. If the mixture becomes softer, chill for a further 10–15 minutes before rolling.

Candied Orange Peel

Finely chop 1–2 teaspoons of candied orange peel and roll it into the mixture before portioning. It adds small pockets of citrus sweetness that stand out against the richer truffle base. If you prefer a lighter touch, use zest instead of peel.

  • 65 g vegan butter
  • 30 g cocoa powder plus extra for rolling
  • 75 g dark vegan chocolate 70% or higher
  • 80 ml maple syrup
  • ½ tsp vanilla extract
  • Pinch of fine sea salt
  • ground hazelnuts for rolling

Storage Notes

These keep best in a sealed container for up to 1 week in the fridge. If they dry slightly, let them sit at room temperature for 10 minutes before serving to soften the texture. Freeze for up to 1 month and thaw in the fridge.

Coffee Grounds Micro-Boost
