These vegan chestnut truffles are quick to mix, smooth in texture, and naturally sweetened with maple. They chill firm, use only a few ingredients, and work well for gifting or keeping in the fridge for the week.

Instructions
Melt the dark chocolate in a heatproof bowl set over a pan of gently simmering water, stirring until smooth.
Add the chestnuts, vegan butter, cocoa powder, maple syrup, vanilla, and salt to a food processor and blend until mostly smooth, scraping the sides as needed.
Pour in the melted chocolate and blend again until the mixture becomes glossy and cohesive. If it feels too soft, chill for 10–15 minutes; if too firm, add 1–2 teaspoons maple syrup.
Scoop and roll the mixture into approximately 15 g portions, shaping each one into a smooth ball.
Roll the truffles in cocoa powder, crushed hazelnuts, or cacao nibs, then place on a plate and chill for at least 30 minutes or until firm.

Storage Notes
These keep best in a sealed container for up to 1 week in the fridge. If they dry slightly, let them sit at room temperature for 10 minutes before serving to soften the texture. Freeze for up to 1 month and thaw in the fridge.
Coffee Grounds Micro-Boost
Add ⅛ teaspoon of very fine espresso grounds (not brewed coffee). It sharpens the chocolate flavour without adding moisture, similar to how chefs use espresso powder in brownies.
Chestnut Purée Hydration Tip
If your chestnuts feel unusually dry, warm them briefly in the microwave with 1 teaspoon water before blending. This softens them and prevents a grainy finish.
