Rich, nutty, and laced with espresso, these Mocha Pecan Protein Bars pack a hit of flavour and fuel in every bite. Made with oats, peanut butter, and toasted pecans, they’re perfect for a mid-morning pick-me-up or a pre-workout boost.

With winter just around the corner, it’s time for bulking. I always struggle to eat enough calories during a bulk while keeping my macros in check, and that’s where bars like these come in handy. They’re not calorie bombs, but at around 280 calories and 13 grams of protein each, these Mocha Pecan Protein Bars are an easy way to slip in some extra fuel. A little bite-sized boost that adds up over the day.

Rolled Oats

The base of the bars, oats provide texture, slow-release carbs, and fibre to keep you full. If you need a gluten-free version, make sure your oats are certified GF.

Protein Powder

This is what gives your bars their protein boost. You could choose any variety and flavour you like, but the most logical flavours would be chocolate, coffee, or vanilla (which I went with). Peanut butter flavour would also probably work great here.

Coffee

For mocha, obviously we need some coffee. I used a shot of double strengh espresso for my bars. If you don’t have an espresso machine, a good substitute would be 2 teaspoons of instant coffee mixed into around 30ml of boiling water. 

Peanut Butter

The glue that binds everything together while adding healthy fats and flavour. Smooth peanut butter gives a denser, fudgier bar, while crunchy adds texture. Almond or cashew butter both work as substitutes if peanut butter is not your thing. 

Dark Chocolate 

Used both inside and on top, it brings that glossy finish and mocha indulgence. By adding it to the bar, it will help the bars set a little harder so they can be transported without falling apart. 

Pecans

Provide buttery crunch and a warm, nutty note that complements the coffee and chocolate. You could replace with any nut here, but pecans are honestly the best nut around (in my opinion…)

Step-by-Step Instructions

Prepare your tin

Line a small rectangular tin (about 18 × 12 cm like a loaf tin) with baking paper, leaving extra over the sides so you can lift the bars out easily later. Lightly grease the paper if you want super clean edges when slicing.

Mix the dry ingredients

In a large bowl, combine the rolled oats, protein powder, cocoa powder, and a pinch of salt. Stir thoroughly to evenly distribute the dry ingredients. This is especially important when using protein powder because it has a habit of clumping together and leaving dry pockets in the final bars.

Melt the wet mix

Put the peanut butter, honey, butter, coffee, and dark chocolate in a heatproof bowl. Set the bowl over a small pan of gently simmering water (a bain-marie). As it all begins to melt, stir until you have a smooth, glossy, chocolatey mix.

Combine wet and dry

Pour the warm mixture into the bowl of dry ingredients. Stir until all the oats are coated and the mix starts to clump together. If it’s too dry, add a little milk, a tablespoon at a time, until it presses together easily.

Press into the tin

Spoon the mixture into your prepared tin and press it down firmly with the back of a spoon or spatula. Make sure it’s evenly compact — this helps the bars hold their shape once chilled.

Either scatter the chopped pecans over the surface and lightly press them in, or melt another 30g of dark chocolate and spread that over the surface, followed by the pecans. 

Chill to set

Refrigerate for at least 1 hour, or pop into the freezer for about 20 minutes. The bars should feel firm and slice cleanly. Once set, lift the slab from the tin and cut into 8 bars. Store in an airtight container in the fridge for up to a week, or freeze for longer shelf life.

Ingredients  

  • 100 g rolled oats
  • 60 g protein powder
  • 15 g cocoa powder
  • 30 ml strong coffee
  • Pinch of salt
  • 120 g peanut butter smooth or crunchy
  • 45 g honey
  • 25 g unsalted butter
  • 50 g dark chocolate 70%
  • 30 ml milk as needed to bind
  • 20 g pecans chopped

Instructions 

  • Line a small rectangular tin (about 18 × 12 cm, like a loaf tin) with baking paper, leaving some overhang to lift the bars out easily. Lightly grease the paper if you want clean, sharp edges when slicing.
  • In a large bowl, combine the rolled oats, protein powder, cocoa powder, and salt. Stir well so everything’s evenly mixed and free of clumps.
  • Add the peanut butter, honey, butter, coffee, and dark chocolate to a heatproof bowl. Set it over a pan of gently simmering water (a bain-marie) and stir until smooth, glossy, and chocolatey.

  • Refrigerate for at least 1 hour, or freeze for 20 minutes until firm and sliceable.
  • Lift the slab from the tin and cut into 8 bars. Store in an airtight container in the fridge for up to a week, or freeze for longer.

Notes

Dairy-Free:
Swap the butter for coconut oil or a dairy-free spread, and use a plant-based protein powder. Choose dairy-free dark chocolate and non-dairy milk (oat or almond both work well).
Vegan:
Use maple syrup instead of honey and make the same dairy-free swaps above. The bars will set just as nicely and have a slightly softer, caramel-like sweetness.
Gluten-Free:
Use certified gluten-free rolled oats. Everything else in the recipe is naturally gluten-free, so that’s the only switch you’ll need to make.
Nut-Free:
Replace peanut butter with sunflower seed or tahini spread and use toasted pumpkin seeds instead of pecans. The flavour shifts slightly but still works beautifully with the mocha base.
Storage & Freezing:
Keep the bars in an airtight container in the fridge for up to a week. To freeze, wrap each bar individually and store for up to two months — they thaw in about 10–15 minutes, making them perfect grab-and-go snacks.

Are these protein bars low carb or keto?

They’re lower carb than traditional bars, but not strictly keto due to the oats and honey. For a lower-carb version, you’d need to replace both.
