Slow cooker red cabbage brings out the vegetable’s natural sweetness, balanced by a gentle tang of apple cider vinegar and the soft warmth of cinnamon and cloves. 

As it simmers, the sugars slowly caramelise, giving the cabbage a deep, jammy richness and glossy texture. It requires very little effort and saves valuable stovetop space — ideal when preparing Sunday or Christmas  roasts with multiple side dishes.

Red cabbage

The base of the dish; it softens slowly and develops a deep, mellow sweetness as it cooks. Slice it thinly so it cooks evenly.

Apple

Adds natural sweetness and acidity, helping balance the vinegar and enrich the overall flavour. Use a firm, tart variety like Bramley or Granny Smith. 

Maple syrup

Encourages caramelisation and enhances the cabbage’s sweetness as it cooks. Adjust to taste depending on the apples used. You could use brown sugar here too. I just use maple syrup wherever possible because I love it. 

Cinnamon stick and cloves

Add warmth and subtle spice; they round out the sweetness without overpowering it. Remove them before serving.

Cider or apple juice

Provides the liquid the cabbage needs to slowly stew until tender. Cider gives a drier, more complex flavour, while apple juice makes the dish a touch sweeter.

Step-by-Step Instructions

Prepare the cabbage, onion, and apple

Remove the outer leaves from the red cabbage, cut it into quarters, and slice it finely. Peel, core, and slice the apples, and finely slice the onion. Keep the slices even so they cook at the same rate.

Tip: Keep a box of latex gloves handy when working with red cabbage — it prevents the purple-blue stains that can linger on your fingers for days.

Layer the ingredients in the slow cooker

Add half the cabbage to the slow cooker first, followed by the onion, apple, sugar, vinegar, cider, and spices. Top with the remaining cabbage and dot the butter on top. Season lightly with salt and pepper.

Start the slow cook

Cover and cook on low for 4–5 hours, stirring once or twice if you’re nearby. The cabbage will gradually collapse and stew in its own juices, deepening to a rich purple as it softens. 

If you’re out or too busy to stir, don’t worry — just mix it well at the end and let it cook for a few extra minutes so everything blends together.

Check for doneness

When ready, the cabbage will be glossy, tender, and lightly coated in a thin syrup. If it looks dry before this point, add a splash of cider or water. If it’s too wet at the end, remove the lid for the last 20–30 minutes to let excess liquid evaporate

Adjust the flavour

Taste and balance before serving — add a little more vinegar for sharpness, or a teaspoon of sugar for extra sweetness. You can also stir in a spoonful of redcurrant jelly or something similar, like homemade cornelian cherry jelly, for a gentle fruity sweetness that complements the cider and spice. Remove the cinnamon stick and cloves before serving.

Make ahead and store

Slow cooker red cabbage is ideal for preparing in advance. Once cooked, let the cabbage cool completely before transferring it to airtight containers. It will keep well in the fridge for up to 5 days, and the flavour only improves as the spices settle and the sweetness deepens overnight. Reheat gently on the stove or in the microwave, adding a splash of cider or water if it needs loosening.

For longer storage, the cabbage freezes well for up to 3 months. Defrost overnight in the fridge before reheating.

Optional canning: If you like to preserve seasonal sides, spoon the hot cabbage into sterilised jars, leaving about 2 cm of headspace. Seal and process in a boiling water bath for 20 minutes (adjust for altitude). Once sealed, store in a cool, dark place for up to 6 months — perfect for adding a homemade touch to winter meals without extra effort.

Ingredients  

  • ½ medium red cabbage about 500 g
  • 1 medium apple peeled and grated or thinly sliced
  • 1 small red onion, finely sliced
  • 1.5 tbsp maple syrup or brown sugar
  • 30 ml apple cider vinegar
  • 50 ml dry apple cider or apple juice
  • 1 stick cinnamon
  • 2 whole cloves
  • 25 g butter swap with vegan butter or olive oil to make vegan
  • sea salt to taste
  • Freshly ground black pepper to taste

Instructions 

  • Slice the red cabbage finely, peel and core the apple, and finely slice the onion.
  • Add half the cabbage to the slow cooker, then layer over the onion and apple. Sprinkle in the sugar, pour in the vinegar and cider, and add the cinnamon stick and cloves.
  • Top with the remaining cabbage, dot with the butter, and season lightly with salt and pepper.
  • Cover and cook on LOW for 4–5 hours, stirring once or twice if possible, until the cabbage is tender and glossy.
  • If the mixture looks dry, add 1 tbsp water or cider; if too wet, cook uncovered for 20–30 minutes to reduce.
  • Remove the cinnamon stick and cloves. Taste and adjust with a splash of vinegar for tang or ½–1 tsp sugar or redcurrant jelly for sweetness. Serve warm.

Notes

If you use vegan butter or olive oil, this slow-cooked red cabbage will be naturally vegan, dairy-free, and gluten-free, so it fits easily into most winter menus without any adjustments.
  • Different fruits: Try adding pear for a softer sweetness or quince for a firmer, more aromatic finish. A handful of dried cranberries or raisins can also add gentle bursts of sweetness.
  • Alternative spices: Swap cinnamon and cloves for star anise and juniper berries for a lighter, more aromatic profile.
  • Sweetener options: Use maple syrup, honey, or demerara sugar depending on what you have. Each adds a slightly different depth — maple for roundness, honey for brightness, sugar for balance.
  • Substitutions: If you’re out of apple cider vinegar, use red wine vinegar or balsamic for a softer acidity. Apple juice can replace cider for a sweeter result.
