Nougat Base
- 60 g oat flour
- 170 g vanilla whey protein powder
- 60 g smooth natural peanut butter
- 70 g maple syrup
- 130 –150 ml milk
- 1 g salt
Peanut Caramel Layer
- 110 g smooth peanut butter
- 35 g maple syrup
- 15 g coconut oil melted
- 100 g Medjool dates blended smooth
- 80 g roasted salted peanuts
- 20 g vanilla protein powder
- ½ tsp vanilla extract
- 2 g salt
Chocolate Layer
- 200 g dark chocolate 70% recommended
- 10 g coconut oil
Line a 23 × 23 cm tin with baking paper, leaving overhang for easy removal.
In a bowl, mix oat flour, whey protein, and salt. Stir in peanut butter and maple syrup. Add milk gradually until a thick, pressable dough forms. Press firmly and evenly into the tin.
In a separate bowl, combine peanut butter, maple syrup, melted coconut oil, blended dates, protein powder, vanilla extract, and salt until smooth. Fold in peanuts. Spread evenly over the base and press flat.
Melt dark chocolate and coconut oil gently over barely simmering water or in short microwave bursts, stirring until smooth. Pour over the caramel layer and spread evenly.
Chill for 2 hours, or until fully set and firm to the touch.
Lift from the tin and cut into 20 pieces. Store in the freezer for best texture.
Variations and Substitutions
For a deeper chocolate profile, add 1–2 tsp cocoa powder to the caramel layer or use 85% dark chocolate for the top. If you prefer a slightly salted finish, sprinkle flaky salt over the chocolate before it sets.
To shift the flavour, try adding ½ tsp espresso powder to the chocolate layer or a small pinch of cinnamon to the nougat base. Both work without overpowering the peanut and chocolate balance.
If you don’t have Medjool dates, soak regular dried dates in hot water for 10 minutes before blending. Honey can replace maple syrup, though it sets slightly firmer when frozen.
