High Fibre Berry Smoothie Bowl

Ingredients  

  • 300 g frozen mixed berries
  • 200 g frozen banana
  • 300 g Skyr
  • 60 g rolled oats
  • 30 g chia seeds
  • 20 g ground flaxseed
  • 120 ml milk plus a little extra if needed

Instructions 

  • Pour the milk into a high-speed blender first, followed by the frozen berries and banana.
  • Add the oats, chia seeds and ground flaxseed, then spoon the Skyr on top.
  • Blend on high until thick and smooth. Stop and scrape down the sides if necessary.
  • If the mixture is too thick for the blades to turn, add extra milk 15 ml at a time until it blends smoothly. Keep the mixture thick enough to eat with a spoon.
  • Divide between two bowls and add your choice of toppings. Serve immediately.

Notes

For a sweeter bowl, use a little more banana or add a small amount of honey or maple syrup. For a sharper berry flavour, add a little lemon juice or use a berry mixture containing more raspberries and blackberries.
 Greek yogurt can replace the Skyr, although it may slightly change the protein content and consistency.
If you don't have chia seeds, use a little extra ground flaxseed or oats, but expect the final fibre content and texture to change. Likewise, any milk works; just add it gradually because thinner plant milks can loosen the bowl quickly.
The blended smoothie bowl can be refrigerated in an airtight container for up to 24 hours. It will become thicker as the oats and seeds absorb liquid, so stir in a splash of milk before serving.
