Gingerbread Syrup
A smooth, spiced syrup made with brown sugar, molasses, and warm gingerbread spices. Ideal for coffee, winter drinks, and simple homemade gifting.

- 450 ml water
- 150 g light brown sugar
- 2 tbsp molasses black treacle
- 1½ tsp ground ginger
- 2 –3 cinnamon sticks
- 8 –10 whole cloves
- 3 –4 allspice berries optional
- ½ tsp grated nutmeg
- 1 tsp vanilla extract
- Pinch of fine sea salt
Toast the cinnamon sticks, cloves, and allspice berries in a small saucepan over medium heat for 1–2 minutes, then lightly crush them and return to the pan.
Add the water, brown sugar, molasses, ground ginger, nutmeg, and salt. Stir to dissolve the sugar and heat gently.
Bring to a low simmer and cook for 12–15 minutes, stirring occasionally, until the syrup looks glossy and lightly thickened.
Stir in the vanilla, then strain the syrup through a fine mesh sieve or muslin cloth.
Cool to room temperature, transfer to a sterilised bottle or jar, and refrigerate for up to 3 weeks. Shake before use.
- Adjust the spice profile: Increase the ground ginger or add an extra cinnamon stick for a stronger, more defined gingerbread flavour. Reduce the cloves if you prefer a softer, less aromatic finish.
- Citrus variation: Add a few strips of orange peel during simmering for a brighter, slightly fresher note; remove before straining.
- Alternative sweeteners: Swap part of the brown sugar for dark brown sugar for a deeper caramel flavour, or replace the molasses with date syrup for a milder result.
- If you’re missing allspice: Leave it out or use a pinch of mixed spice as a simple substitute.
- Dietary notes: This syrup is naturally vegan, dairy-free, and gluten-free as written.
- Storage: Keep refrigerated for up to 3 weeks. The syrup can be frozen in small containers or ice cube trays; thaw in the fridge and stir before using.
